Rice dumpling - Banh Rom from Phu Nhi village

Bánh Rợm (rice dumpling) is well-known all over Đoài  area, and the most famous brand is one from Phú Nhi, which is filled with shrimps so its flavor is quite unique that charms all eaters.

Legend has it that this type of dumpling has been well-known since the reign of King Lê Thánh Tông (15th century), and used to be bánh tiến vua (dumplings presented to the King).

Shrimp-stuffed bánh dợm Phú Nhi is made from 7 portions of first-class sticky rice and 3 portions of dự hương rice, which are mixed together, soaked and later finely ground in a stone mortar. The mixture is poured in a fabric stretched over a closely-woven basket so that the water drains off. Thịt ba chỉ (the belly meat of the pig) is cut into very small pieces. The heads and tails of medium-size shrimps are all removed, and the bodies left intact. Shallots and soaked wood-ear mushrooms are also cut into tiny pieces. All ingredients are stir fried for some time with the frying pan lid on so that they become softer. Then they are deep fried and seasoned with some fish sauce, pepper and mangdana essence. The crush is spread evenly and thinly inside the palm, filled with the stuffing and wrapped into a round and flat piece of dough. Some cooking oil is applied onto the crust so that it will not stick to the fresh banana leaf that is used as the wrap. The dumplings are then placed in a boiler. A good maker will give a done dumpling with transparent crust so that we can see the stuffing, making the dish even more appealing.

Bánh Rợm are often carried away to be sold in countryside markets, so they are wrapped tight. One must be gentle to unwrap it, tearing along threads of the fresh banana leaf, so that the dumpling will not stick to the leaf and be unbroken. Under the wrap is the yummy ivory white dumpling of sticky rice filled with shrimps that we can eat until we are full and still feel so tasty.
